What is a food truck? 

While the origins can be traced to the original chuckwagons of the west, today the concept varies from something as simple as the ice cream truck of the 60s, a gourmet hot dog cart or the modern and fully equipped kitchens of today's epicurean mobile food vendors.

The idea is born out of necessity and convenience. Some events like concerts, fairs and festivals simply don't have all of the food services necessary to feed crowds of people. Many public recreation areas may not have restaurants nearby. Sometimes families just need a way to grab something quick without having to bring children into a sit-down restaurant. Ultimately, palates have evolved and food trucks are perfectly positioned to bring high quality food, more choices and fast service directly to the people.

The modern food truck concept has exploded in the last decade. Many cities have embraced the idea and food trucks move and park where people gather. They travel to college campuses, work places, concerts and some are even organized into food truck parks.

The menus and culinary options are endless. Some simply serve as mobile vendors, while others prepare great “street food”, on site, with extensive menus. Some focus on niche markets, with exotic menus, looking to attract foodies and the adventurous. Either way, you'll find clean, quickly prepared food at reasonable prices.

Gone are the days of the “roach coach”. Today's vendors have to meet all the standards of standalone restaurants and are licensed and permitted by health authorities. In fact, you get to peer into the kitchen of the food truck every time you visit one and can judge for yourself.
